Flounder and Green Beans, Italian style

I buy these flounder fillets already skinned and ready to go. There are two fillets per wrapper and they are easy to defrost in warm water in the wrapper. My idea of a good fish dish is battered and fried but because I have to worry about being healthy, this is my consolation and it actually tastes pretty good. I usually have enough to have leftovers for one more meal.

  • One defrosted package skinned flounder (2 fillets)
  • Olive oil
  • Sweet red peppers, cored and chopped
  • One package green beans already microwaved
  • 2 tsp concentrated tomato paste (in a tube)
  • Dried Italian seasoning
  • Hot paprika
  • Heat the olive oil (about 1 T) in the skillet
    Season the flounder and add to the hot skillet
    Sear on both sides then remove from pan
    Add the green beans and sweet peppers and sauté for a few minutes
    Stir in the tomato paste
    Gently add the fillets back in and heat through
