Carnitas Verde Crock Pot Stew

This is an easy pork stew/soup that can be served over rice or with cornbread or tortilla chips.


  • One T olive oil
  • One poblano chili — cored and cut in thin strips
  • One package pork stew meat (already cut up)
  • Dry spices — one tsp each basil, cumin, chili powder + salt to your preference
  • Better Than Bullion — 2 tsp mixed in 3 cups boiling water

Place all in crock pot in order listed above on high for 4 hours or until meat separates easily with a fork.

Service with cornbread, tortilla chips, or over rice
Stir about once per hour while in the crock pot
Ready to refrigerate and make several meals
