This simple dish has infinite possibilities. You can make it high calorie and totally filling or healthier and still satisfying. I got the idea from a little restaurant called Kix on 66 in Tucumcari, New Mexico.
Base ingredients are
- raw shredded potatoes (I use Simply Potatoes)
- egg beater — you can use real eggs if you want.
I’ve added the following at different times and in different combinations —
- Cooked turkey bacon
- Shredded cheese
- Red sweet pepper, diced
Cook the potatoes in unsalted butter in a nonstick pan. Season with creole seasoning or cayenne pepper. It works best if you don’t overload the potatoes because you want them crispy. Add any other ingredients except the eggs and cheese. Get it just the crispiness that you like, then pour in the eggs and cheese. You only need to cook another minute. Turn off the stove and continue flipping over with a spatula two or three more times until the eggs aren’t runny at all.
I prefer mine with salsa verde or green hot sauce but also good with ketchup.
